How To Make Creamy Butternut Squash Soup

You Will Need
- 2 olive oil
- 1 onion, chopped
- 1 tsp garlic, minced
- 1 butternut squash, diced and roasted
- 400 ml vegetable stock
- 50 ml double cream
- parsley to serve
Heat the oil in a pot and add the onion and garlic and let them cook a little. Season with salt and pepper then add the pre-roasted butternut squash. Pour over the stock, stir and bring to the boil.
Reduce the heat and simmer for around 25 minutes. Blend well until smooth and creamy then serve topped with parsley and cream.
