How To Make Lamb Kofta

Ingredients
- 1 packet of mint, coriander and flat leaf parsley
- 1/2 red onion, chopped
- 1 tsp heaped coriander
- 1 tsp heaped cumin
- 1 tsp heaped cinnamon
- 180 g lamb mince
- 180 g beef mince
Step 1: Blend The Herbs And Red Onion
Add a handful of parsley, coriander and mint to a blender. Add 1/2 chopped red onion. Pulse for 10-20 seconds.
Step 2: Form The Koftas
Place 1 tsp heaped coriander, 1 tsp heaped cumin, 1 tsp heaped cinnamon into a bowl containing 175g lamb and 175g beef mince. Add the herb and onion mix. Massage the herbs and spices into the mix until the ingredients are well incorporated.
Step 3: Fry The Koftas
Add 1 tbsp pistachios and a pinch of salt and pepper. Roll the koftas into balls and fry in a pan over high heat.
Step 4: Oven Cook And Serve
Once the balls are browned on all sides, add to a baking tray and place in the oven at 200C for about 10 minutes. Remove and serve with pitta bread, lettuce and tzaziki.
